We just got back from spring break with my senior…and the very next day, a 26-inch blizzard hit! ❄️ Talk about jumping straight back into reality. Between laundry and digging out from all that snow, the last thing I want is a complicated dinner.

That’s why I’m all about one-pot meals. Fewer dishes, easy prep, less work —and still packed with flavor and nutrition. 🙌 They make dinner simple, stress-free, and actually enjoyable.
