Weeknight Meals That Make Life Easier


As winter slowly starts to pass, life around our house feels like it’s shifting too. We’re in the middle of my daughter’s senior year of high school, my son is back on campus for his second semester of sophomore year already, and everything feels like it’s moving just a little faster than before. Even with all those changes, slow cooker meals are still one thing I can always count on. They make busy days easier, give us plenty of leftovers, and I love being able to freeze a few meals to send back with my son so he can enjoy a homemade meal from mom now and then.

With February still bringing cold days and busy schedules, getting dinner on the table can feel like one more thing on a long to-do list. To help, I’ve put together 5 days’ worth of simple, kid-approved meals made with everyday ingredients and very little effort. Each one has earned a thumbs-up from our own kids, and I hope they bring a little extra warmth and comfort to your family’s table this week.

Crockpot Pizza Casserole

This Crockpot Pizza Casserole has all the cheesy, saucy goodness you love of a pizza, with the convenience of a slow cooker. Packed with beef, pepperoni, melty cheese, and peppers, it’s perfect for busy weeknights. Crockpot Chicken Enchiladas

Our crockpot chicken enchiladas are a crockpot meal packed with chicken, beans, corn, and lots of cheese! This gluten-free dinner is easy to assemble in the morning and can cook all day. Before serving, shred the chicken, add the beans, corn, cheese, and tortillas, and dinner is ready!

Crockpot Lasagna

William's Chili Recipe

Weekend Meals
